Open Question: someone who has a TASTE for travelling.. advice on FRANCE?

The keyword we're focusing on is AMBIENCE and we are trying to avoid TACKY. I am trying to find lil GEMS in france that hasn't witnessed by many. I would like maybe a hilly town, where you could bicycle around in the day, and at night enjoy cheese at an old guys lil tavern.
